What you need

Ingredients

120g fresh green beans
1 garlic clove
20g unsalted butter
1 small ball mozzarella
6 pitted black olives

Method

Top and tail the green beans and cut them in half.

Steam the beans (or cook in boiling water) for 5-7 minutes until cooked through, then drain well.

Peel and crush the garlic. Add the butter to a frying pan and melt over a low heat. Add the crushed garlic and cook for a minute or two to soften the garlic.

Add the beans to the pan and stir to coat in the garlic butter.

Remove from the heat and divide the garlicky green beans between three small bowls.

Use a melon baller or sharp knife to cut small balls from the mozzarella cheese.

Cut rings from the olives and add one to each mozzarella ball to make eyes.

Add two or three olive and mozzarella eyes to each portion of green beans to turn them into monsters, then serve immediately.

Frozen vegetables make a great cheaper alternative to fresh - check the packaging for cooking times and adapt the recipe accordingly. 

The cheese and olive eyes make this an extra fun monster themed dish for little ones, but the garlicky green beans also make a great easy side dish for the whole family, with or without the eyes!
