Method
Finely chop the onion and peel and finely chop the carrot and potato. Heat the oil in a small pan over a medium heat. Lightly fry the onion and carrot until soft, about 5 minutes.
Put half this mixture in a bowl and set to one side. Add the water, potato and sweetcorn to the pan and stir to mix. Cover and simmer for about 15 minutes.
Add the herbs, then puree or roughly mash the mixture before adding the reserved vegetables. Add extra water if a thinner consistency is preferred. You can puree this recipe down for younger babies and then serve as a side dish for the rest of the family.
