Ingredients

Half a fresh broccoli head (approx. 150g)
150g fresh green beans
150g Frozen peas
1 Tbsp olive oil
2 garlic cloves

Method

Prepare the ingredients; cut the broccoli into florets and cut the broccoli stalk into pieces, top and tail the green beans and cut them in half, peel and crush the garlic.

Place the broccoli in a pan of boiling water and cook for 3 minutes. Add the green beans and cook for a further 2 minutes, then add the frozen peas to the pan and cook for another 3 minutes.

When all the vegetables are cooked, drain and put to one side.

Heat the olive oil in a pan. Add the crushed garlic and cook on a low heat for a minute or two to soften the garlic.

Add the vegetables to the pan and stir to coat in the garlicky oil.

Turn off the heat, then roughly blend the vegetables with a stick blender to mash. Serve warm.

Use the whole stalk of the broccoli in this recipe to save on food waste.

Frozen vegetables make a great cheaper alternative to fresh - check the packaging for cooking times for each vegetable and adapt the recipe accordingly.
