What you need

1 large ripe banana
50g crunchy peanut butter (one that is made from 100% peanuts with no added sugar or salt)
1 tbsp whole milk
¼ tsp vanilla extract
100g rolled oats
20g plain flour
2 packets of Organix Raisins

Method
Preheat the oven to 180°C / 350°F / Gas Mark 4. In a large bowl, mash the banana with a fork until smooth.
Add the peanut butter, milk, and vanilla, then mix well. Add the oats, flour, and raisins, then stir until combined.
Place approx. 12 evenly sized spoonfuls of the mixture onto an ungreased baking tray, with space in between them, then press down on each one with the back of a spoon to squash slightly.
Bake in the preheated oven for about 12-15 minutes, then leave to cool on the baking tray. The cookies should be crunchy on the outside with a slightly cake like texture in the middle.
