Method
Blitz the nuts in a food processor to a crumb – ensure finely chopped or ground with no large pieces. Add the dates, orange zest and spice, and blitz until it just comes together. You should be able to press the mixture easily together to form a ball. If not, blend a bit more.
Create 6 small balls about 2cm in diameter and 6 slightly larger balls about 3cm in diameter. Roll all the balls thoroughly in ‘snow’ (desiccated coconut on a plate), until well coated. Place a small ball on top of a large ball and fix together using a cocktail stick. There will be a bit of stick left poking out of the top of the snowman's head. To cover this, create a hat shape by cutting a grape in half with a sharp knife, then slide the hat onto the end of the stick on top of the snowman's head.
Then give the snowman some pumpkin seed eyes and a slice of dried apricot for a nose. A slither of apple skin creates a wonderful scarf and some raisins cut in half create a smile and some buttons. Some grape stems can be used to create fabulous ‘twig’ arms! Create all 6 snowmen, then stand on a plate of snow (desiccated coconut). For babies and toddlers remove the cocktail stick before serving and cut or crumble the balls into pieces so they are not a choking hazard.
Serve straight away. Great to display as part of a Christmas party table and you can easily add extra snowmen if you have lots of guests!
