Halved pear

What you need

Ingredients

For the cake
40g unsalted butter
5 tbsp (100g) honey
1 egg
180g self-raising flour
1tsp bicarbonate of soda
100mls buttermilk
For the pears:
Knob of butter
1 tbsp (20g) honey 
Splash of water
2-3 ripe pears

Method

Preheat your oven to 180°C / 160°C fan / gas mark 4 and grease a 20cm round cake tin with the knob of butter (or similar sized glass/ceramic baking dish).

Mix the water with the honey to loosen the honey then pour into the cake tin. Core and slice the pears, then arrange evenly on top of the honey.

In a mixing bowl, beat the butter, honey and egg together with an electric whisk. Mix all dry ingredients together in a small bowl, then sieve into the creamed mixture a little at a time, adding some of the buttermilk after each addition.

Spoon the cake batter over the pears then bake for approx. 30-35 minutes or until a knife inserted into the cake comes out clean. Check the underneath to make sure the top is cooked!

Remove from the oven, allow to cool for a few minutes and then turn onto a serving platter.
