What you need

Ingredients

80g of self-raising flour 
1 tsp of baking powder
90ml of whole milk (or dairy free plant based alternative) 
1 egg (or 1 tbsp of ground flax and 2 & half tbsp of water) 
1 tin of sweet corn (drained) 
30g of grated cheese (optional)

These healthy sweetcorn fritters for baby and toddlers are simple to make and delicious to eat! Perfect for baby led weaning and little lunch boxes too.

Method

Sieve flour into a medium-sized bowl along with 1 tsp of baking powder.

In a separate bowl mix the egg and milk together. Then add to flour and mix well until you create a smooth thick texture for these healthy sweetcorn fritters.

Add the sweetcorn along with grated cheese if you are using.

Heat a drizzle of oil over a medium heated pan. Add 1 tbsp of batter to the pan to form a small round sweetcorn fritter.

Cook for 4-5 minutes each side until lightly golden. Then serve these healthy sweetcorn fritters and enjoy.

If you're experimenting with baby led weaning, sweetcorn fritters make a great snack or meal from 10 months.
